Since I'm leveling my LJ and carpentry right now, I figured I'd just put it out there that you can keep doing the less valuable mats for a very long time.

So far, I'm 81, and I've been able to chop logs throughout.
At 60, I got access to Gnarled Logs
At 70, I got access to Old Growth.

This could be helpful if, like me, you're also leveling carpentry at the same time. You can always do Logs and keep your Fine Wood, Gnarled and keep your Heartwood, and Old Growth and keep your Greater Heartwood.

It also looks like there's a bit of sense in how much exp is rewarded.

At the same LJ level I received the following rewards (approximations adjusted for differences in level)

Logs: 300
Gnarled: 450
Old Growth: 900
